Simple Saturday Salad

I love to keep things simple, and my Saturdays are no exception. And nothing says simple like a quick and easy salad. This Kale Caesar is not only delicious but it’s a cinch to make. Throw some grilled chicken on top, and you’ve got yourself a hearty lunch or dinner. Enjoy!

Caesar Dressing:

2 Small Garlic Cloves, minced

1 teaspoon Anchovy Paste (i skipped this, but feel free to add!)

2 tablespoons Lemon Juice (preferably fresh squeezed)

1 teaspoon Dijon Mustard

1 teaspoon Worcestershire Sauce

1 cup Mayonnaise

1/2 cup Freshly grated Parmesan

1/4 teaspoon Salt

1/4 teaspoon Ground Black Pepper

Directions:

In a mixing bowl, whisk together the garlic, anchovy paste (optional), lemon juice, Dijon mustard & Worcestershire Sauce. Then, add mayonnaise, Parmesan, salt and pepper. Whisk until well combined.

Kale Salad:

1 Kale Bunch with tough stems removed. Massage the kale with a bit of salt before cutting into ribbons.

Sliced grape tomatoes, i used rainbow 🙂

Croutons:

I cut up some old bread (the ends no one ever wants), and tossed with olive oil, garlic powder and Trader Joe’s every day seasoning (the best stuff ever) and baked at 350 degrees until crispy.

Simply toss the kale, tomatoes and dressing in bowl together. Add your croutons and top with more grated Parmesan. Yum!
