I have discovered Chia Seed pudding and now there is no going back. So delicious. So easy to prepare, and the recipe combinations are endless. For this recipe, I combined two of my favorite flavors, Cherry and Vanilla. I mean, how can you go wrong with these two ingredients? I threw this together before bed, and I awoke the next morning to a decadent breakfast. Recipe Below, Enjoy!!
2 Cups Almond Milk (Coconut Milk would also be a delicious option)
1/2 Chia Seeds
1/2 Teaspoon Vanilla Extract
1/2 Cup Cherry Preserves
1/2 Cup of Pitted Fresh Cherries
1/4 Teaspoon Nutmeg
In a large mixing bowl pour in your Almond Milk, Chia Seeds, Vanilla Extract, About half of the Cherry Preserves and Nutmeg. Using a whisk, mix thoroughly until well blended. Spoon the remaining Cherry Preserve in the bottom of the jar, then pour in Pudding Mixture, and place in refrigerator overnight, or about 4-5 hours to allow time to set. When ready to eat, top with fresh cherries, and enjoy!
